The Chioggia beet (pronounced kee-OH-gee-uh), also known as the candy cane, candy stripe, or bull’s eye beet. You can prepare Chioggia beets the same way you would prepare regular beets, but you’ll find there is less “bleeding” of red juice when preparing. 

The greens are crisp and of high quality. The flesh is very tender, mild, and sweet.

Tip: When boiling Chioggia beets, add a splash of lemon juice or white vinegar to keep their color from fading.
