Kohlrabi

Kohlrabi

Also known as a German turnip, this cruciferous vegetable that can be eaten raw, roasted, or steamed. The leaves are edible and can be prepared similar to other greens and kale. The bulb can vary from green to purple and is tender and with a texture similar to a broccoli stem, and is more flavorful. Make sure to trim and peel the bulb prior to eating.

Storage

Remove leaves from the bulb and store in separate bags in the refrigerator. Kohlrabi can be stored a week in the fridge with the bulb sometimes lasting longer if separated from the leaves.
