Round, yellow to golden stone fruit that looks like a small peach, but has the tartness of a plum. Apricots are in season in the spring and summer. Apricots are popular for pies, cakes, and crumbles, but also make a great topping for salads.

Storage

Apricots will continue to ripen after being picked. To further ripen place in a brown paper bag on your counter. They are ripe when they are slightly soft but firm and will often have a sweet aroma. Once fruit is ripe, store unwashed in the refrigerator. Prolonged cold temperatures may change texture and taste.
